Pepper Chicken Fry Without Oil

Chicken pepper fry recipe is said to have originated in modern-day Chennai, a state in India. In the state, there is a region called Chettinad which is famous for its fiery foods. The denizens of the region invented the recipe and introduced it to the rest of the world.


  • Chicken wings 750 grams
  • Black Pepper 2 teaspoon
  • Salt as per taste
  • Ginger garlic paste 1 tablespoon
  • Curd 3 tablespoons
  • Lemon zest (few)
  • Lemon juice 1 whole lemon
  • Black pepper corn 15 to 20(seeds)
  • Pierced green chillies 5 pieces
  • Black pepper powder 1 teaspoon
  • Parsley (a handful)
  • Sliced lemon 4 pieces


Firstly, In order to cook dry pepper chicken fry take 750 grams of chicken wings. Clean these pieces carefully with water and add 2 teaspoons black pepper powder, salt,1 tablespoon garlic ginger paste,3 tablespoon curd. Therefore, add lemon zest and squeeze the juice of a king-size lemon to pour in it. Now smear all the ingredients with the pieces of chicken and leave it for 20 to 25 minutes in the exact same condition.

Secondly, start the real process of cooking exactly after 25 minutes. Take a non-stick Kadai  (or a non-stick cookware) and put 20 to 25 black pepper seeds. Then fry them for 2 to 3 minutes keeping the flame of your gas in medium heat. In your next step, you should put wing pieces  (one by one)in the Kadai and then fry them. Keeping the flame in medium heat fry these pieces for exactly 5 minutes. Repeat the process to fry all the pieces.

As the chicken pieces were marinated in curd, try to fry them putting a lid in the Kadai. The process of frying the chicken pieces under a lid is very important because it helps to extract water from the raw chicken. The extracted water helps the chicken to boil very easily.

Thirdly, add the spices  (spices used once for marinating the chicken) and a very little water into the Kadai. Put the lid

Now put the flame of the gas in medium heat and let it boil for 5 minutes

Uncover the lid and notice that your cooking is nearly done. This dry-fry pepper chicken does not require too much gravy. It spoils the taste.

Finally, add 5 pieces of sliced chilli,1 teaspoon pepper powder and a handful of parsley. Then boil the entire chicken in low flame for a couple of minutes

Switch off the gas oven and uncover the lid to add 4 pieces of sliced lemon in it. Then cover it again for 2 minutes

Peeper fry chicken is ready

Pro Tips:

  1. To prepare lemon zest take a slicer and rub the yellowish or greenish portion of the lemon
  2. Chicken wings are recommended for the recipe
