Dry Mushroom Preparation Like A Pro

Our love for edible mushrooms is thousands of year’s old. People were eating and consuming mushrooms thousands of years before they began to grow it

The very first bit of evidence of eating mushrooms appears to become from 19000 years ago from a cave in northern Spain. It was found in the remains of a lady that had been uncovered some spores of number of different varieties and they were found in the spot on her teeth indicating that she was eating several different varieties of mushrooms that came from the group of boletus (a kind of edible mushroom) Thus our ancient love for eating mushrooms compels us to make varieties dishes of mushrooms. Cooking dry mushroom is easy. Given below is the recipe of dry mushrooms.

Dry Mushroom Recipe Ingredients:

  1. Button Mushrooms(3 packets)
  2. Onions 3(medium size)
  3. Garlic paste 2 teaspoons
  4. Ginger paste 2 teaspoons
  5. Cumin seeds 2 teaspoons
  6. Coriander seeds 1 tablespoon
  7. Green chilli 4 pieces
  8. Salt(as per taste)
  9. Refined or mustard oil 2 tablespoons
  10. Cardamom (small 2 pieces)
  11. Cinnamon 1 inch
  12. Red pepper 2 pieces
  13. Bay leaf 1
  14. Capsicum 1 (small)
  15. Turmeric powder1.5 teaspoon
  16. Cumin powder 1 teaspoon
  17. Coriander powder 2 teaspoons
  18. Chilli powder 1 teaspoon

How To Clean Mushrooms:

when mushrooms are kept in a refrigerator, a light black spot appears at the surface of mushrooms. This black spot should be removed. In order to clean them, take the packets of mushrooms (in this dry mushroom recipe 3 packets have been used) and keep them in a fairly large glass bowl and pour Luke warm water (as per requirement) in it. Therefore, add white flour (few) in the luke warm water. After that, gently rub all the mushrooms ( one by one) with the flour. It will be noticed that the black spots are getting slowly removed from all the mushrooms. In case the mushrooms are fresh, there is no need to clean them applying the above process.

Now cut these button mushrooms into two halves and keep them in a separate bowl.

 Preparation masala mix 1.0:

In this step masala mix 1.0 for the dry mushrooms will be prepared.

Now take a kadai  ( a non stick cookware) and place it on the gas oven. Switch on the oven (low to medium heat) .After that, pour 2 tablespoons mustard or refined oil in it. Make the oil warm.

Thereafter, add 2 medium sized onions (sliced) and fry it for 2 minutes. Then add 2 teaspoons ginger paste and 2 teaspoon garlic paste in it. Stir them well for at least 2 to 3 minutes. Always try to keep the flame of the gas oven in low to medium heat.

Next, add 4 pieces of green chillies  ( sliced) , 1 sliced tomato  ( king Size) , salt ( as per taste ) , 1 teaspoon chilli powder, 2 teaspoons coriander powder, 1 teaspoon cumin   powde,r 1/2 teaspoon turmeric powder in it. Fry all the ingredients together. A mild fragrance will come out of the fried masala. Masala mix 1.0 is now ready.

How to fry the Pieces of mushrooms:

In this step, the pieces of mushrooms will be fried.

Put oven in high flame and add the pieces of mushrooms with the masala mixture. Mix them well for a couple of minutes. Then put the gas oven in low heat.

Take a lid and cover it for 5 to 7 minutes.

The mushrooms would emit a fairly large amount of water and this water will boil the mushrooms. There is no need to add additional water

Uncover the lid and exactly after 7 minutes.

The water emitted by mushrooms should be dried. Hence put the oven of the in high flame…

 Preparation Of Masala Mix 2.0:

On the other hand, another masala will have to be prepared for the recipe.  In another oven put a frying pan and  make it warm. ( low to medium flame) .Therefore, add 2 teaspoons cumin seeds, 2 cardamoms  ( crushed ), 1 bay leaf, 2 red pepper  , 1 inch cinnamon and fry them together for 1 to 2 minutes.

Switch off the gas oven. Then, pour the masala mixture (2.0) in a separate bowl and let it cool. After that, pour the fried masala in a mixing grinder .Do not turn the the masala entirely like powder. Masala 2.0 is ready for the recipe.

Finally, the water emitted by mushrooms is now dry. Therefore, capsicum and sliced onions should be added to it. Mix them well. You should not fry capsicum and sliced onions for a long time because these will get softer and spoil the taste

Again take the lid and cover it for 2 minutes.

Dry Mushroom is ready.

Try it with rooti, laccha parathas,rice, naan or bread
